What chicken can you use?

I pressure cooked the chicken for this recipe, but if you wanted to make a super-fast version, you could use canned chicken, rotisserie chicken from the grocery store deli, or even a bag of frozen pre-cooked, seasoned chicken strips.

I like using boneless, skinless chicken breast meat, but you could use thigh meat or even ground chicken for this recipe. Just saute the ground chicken with the onion and chopped poblano before adding the rest of the ingredients.

What beans can you use?

As with the chicken, you have the option of pressure cooking the beans yourself, or buying canned beans. I chose to use my favorite brand of canned beans in my batch of White Bean Chicken Chili, since I was pressure cooking the chicken.

Is Ninja Foodi White Bean Chicken Chili Dairy Free?

This recipe that I’ve developed is dairy-free because I don’t tolerate most dairy products. But if you do okay with dairy, then feel free to add any of the following to the recipe to make it creamier.

I think these would be a delicious addition to the recipe:

  • Sour cream to top it
  • 4 oz of cream cheese mixed in at the end
  • 1/2 cup heavy whipping cream

Seasonings for This Recipe

This white bean chicken chili recipe has a mild spicy flavor profile, but if you don’t like any heat in your dishes, you can eliminate the poblano pepper and smoky paprika, or reduce the amount.

How to Make White Bean Chicken Chili in the Ninja Foodi

Ninja Foodi White Bean Chicken Chili

This Ninja Foodi White Bean Chicken Chili cooks up in about 30 minutes! It's mild spicy flavor can be dialed up or down, depending on your liking. Serve it with baguette slices, warm bread sticks, or your favorite grilled sandwich for a hearty lunch or dinner.


  • 1 lb. fresh boneless, skinless chicken breast
  • 1 Tbsp. oil
  • 1 onion, diced
  • 1 poblano pepper, seeds and ribs removed, diced
  • 32 oz. chicken broth
  • 1 15 oz. cans white beans, drained and rinsed
  • 1/2 jar Salsa Verde
  • 1 tsp. cumin
  • 1 Tbsp. fresh cilantro, chopped
  • 1/2 tsp. smoky paprika
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1 Tbsp. lime juice
  • Salt & pepper to taste


  1. To pressure cook the chicken breasts, place the Broil Rack in the Ninja Foodi cooking pot. Pour 1 cup of water into the pot. Place the chicken breasts on the Broil Rack. Attach the pressure cooker lid, making sure the release valve is in the SEAL position. Turn on the Ninja Foodi and select the PRESSURE function. Set the time to 10 minutes and press START.
  2. While the chicken breasts are cooking, dice the onion and poblano pepper. Rinse and drain the beans. Wash and chop the cilantro. Measure out the spices.
  3. When the chicken breast is done cooking, turn the release valve to VENT using a wooden spoon. Once all the steam is released, carefully open the lid. Remove the chicken to a plate. Take out the Broil Rack. Dump the liquid out of the cooking pot and replace the pot in the Ninja Foodi base.
  4. Select the SAUTE function and set the TEMP setting at 2. Add the oil to the cooking pot, and once heated, add the diced onion and poblano pepper. Cook the vegetables until the onion is translucent, about 5 minutes.
  5. While the onion and pepper are cooking, shred the chicken using two forks.
  6. When the vegetables are done, add the shredded chicken and remaining ingredients to the pot. Stir until thoroughly mixed. Increase the cooking temperature to the 4 setting. If the soup begins to boil, reduce temperature to 3 and cook for about 10 minutes.
  7. Serve with your favorite toppings and accompaniments.
