Parsnips Parsnips are seasonal vegetables (fall to spring), so they may be hard to find in the grocery store when they’re out of season. I’ve found that stores like Natural Grocers will sometimes carry them year-round, though. But for the best parsnips, hit your local farmer’s market in the fall.

Broth Although I’ve listed vegetable broth for this recipe, really any broth will do. I’ve tried mushroom broth, different brands of vegetable broth, as well as chicken flavored vegan broth in this recipe and it all tastes good. So, pick your favorite broth, or use whatever you have on hand.

Heavy Whipping Cream Like the broth, you can use a variety of different dairy or dairy-free products in this recipe. I’ve tried coconut milk and half-and-half and both work well. I encourage experimenting with your favorite “milk” product.

Chipotle Pepper I love the flavor and heat that a chopped chipotle pepper gives a dish, so you’ll find it in most of my “spicy” recipes. Leave it out if you like, or even substitute another pepper, like roasted red pepper.

Tips for Making Spicy Parsnip Soup in Soup Maker

Can I make it vegan or dairy-free? To make it vegan/dairy-free, you could you a plant-based butter instead of cow butter and substitute a non-dairy milk for the heavy whipping cream. See the substitution suggestions above for alternative ingredients.

Can I make it low-fat or fat-free? With 28 grams of fat per serving (if made according to the recipe), this is certainly a high fat dish. But you could lower the fat content by substituting a low-fat milk product like half-and-half for the heavy whipping cream. You could also omit the butter.

Ingredients

  • 2 Tbsp butter
  • 1/2 cup onion, chopped
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • 3 cups parsnips, peeled and chopped
  • 3 cups vegetable broth
  • 1 cup heavy whipping cream
  • 1 chipotle pepper in adobo sauce, seeds removed, chopped

Instructions

  1. If your soup maker has a SAUTE function, add the butter, onion, cumin, and paprika to the jug and press SAUTE. If it doesn't have a SAUTE function, start with Step 2.
  2. Add remaining/all ingredients to the soup maker. Stir before installing the lid.
  3. Select SMOOTH SOUP function, then START.
  4. When the soup in done, serve immediately.
